Medhu Vadai is a famous South Indian recipe. It can be taken for breakfast, lunch and also as a snack. Let us see how to make it crispy outside and soft inside. Normally raw rice is used along with ulund dhal, but I use pre boiled pulungal rice, so it comes very crispy outside and soft inside. It also remains crispy for long hours. Ingredients Ulund dhal - 1 glass (250 Gm) Idly rice - 1 hand ( 3 tbs) Salt, oil, ginger, green chilly, curry leaves, onion. Steps Wash and soak ulund dhal and rice for 2 hours. Drain the water and grind it in grinder. Add only 2,3 tbs of water while grinding. Just dip your hand in water and handle the batter by wet hands. The batter should be fluffy and non sticky. It should be grinded for 30 minutes. Take out. If you use mixi for grinding, mix it well using your hand or spoon for 4,5 minutes, until you get fluffy. Mix salt, ginger, green chilly, curry leaves, onion. Make vadai as shown, deep fry in oil until it is crispy cooked. Try this vadai using ulund dhal along with idly rice and send me your feedbacks. Recipe #86 Hi All, Thanks for liking, watching, commenting and sharing on my cooking channel videos. Hope all of you had a great Pongal/Sankranti and the most expected holidays over the rest of the month looks dry with usual days. So was thinking to share something interesting and recalled many of you all requesting me for the Medhu vadai/lentil fritters recipe. So that going to be our dish today. Its no easy feat I can say as I have been trying this for many times to make it the perfect shape and texture that's crispy but soft which gives its name, Medhu –‘Soft ‘ Vadai. As usual before we kick start on the process for it a little glimpse into its history and my history with it. The ‘Vada’ is said to have been popular in the Tamil region from as before as 100 BCE as explained in the sanskrit scripts. Also in an encyclopedia compiled by the King Someshwara who ruled Karnataka as ‘Vataka’ – a delicacy made with soaked green peas ground and fried. It is also more pronounced in the northern regions of Bihar & UttarPradesh in the name of ‘bara’ and ‘Mungaura’- made with moong dal. The labourers from this region went to work in other neighbouring countries in the mid 19th and 20th centuries and carried this dish along with them to these regions like Trinidad, Fuji, Mauritius, South Africa etc. My experiments with vada started off as trying any dish. But then when my better half teased that I am not able to get it right however good it is I made a resolution I will get this right whatsoever and make this process easy with clear steps to guide any amateur cook like me to get it perfect as well. This recipe I am sharing with you today was tagged perfect by not only by my very picky hubby who is my first critic as always but also friends. Medu vadai/ Ulundhu vadai is a delicacy that’s common in all hotels not only in south India but also in the north. Served with idly, dosa, VenPongal or alone with sambar and chutney this crispy but soft snack is very tasty and healthy. Not only as breakfast it’s a famous snack when dumped in a delicious sambar to make sambar vada and dip it with spiced up curd to make ’Thayir’- curd vadai /Dahi Bhalla. So follow my instructions and mainly my tips as this has been put together after a lot of trial and error. Enjoy this step by step recipe to make the perfect crispy and soft Medhu vadai/Lentil fritters. Try this super easy, tasty breakfast recipe and let me know how it worked for you. Share pictures and stories which I share with all of you! #MeduVada #MedhuVadai #UlundhuVadai #Vada #Vada Ingredients : Urad dal : 1 cup (215gm) Potato : 1 (medium) Onion : 1 (Medium) Green Chilly : 4-5 Chopped Ginger : 1 inch Curry leaves : 8 -10 Coriander leaves : few Hing/ asafoetida : 1/2 tsp Rock salt : 1 tsp (as required) Water : 2 tbsp Rice flour : 2 tbsp Corn flour : 2 tbsp Baking soda : 1/4 tsp Oil : as required Instructions: • Wash 2-3 times the urad dal and soak in water for about 3 to 5 hrs. • Take a medium sized potato. Boil and smash it well. Set aside. • After 5 hours keep a pan on low flame and add the chopped onions. Saute for a minute. • Now add the chopped ginger, green chilly and saute for 30 seconds. • Add the chopped leaves and saute well. Switch off the stove and set aside. • Now in a mixie jar apply oil on the sides and lid. • Now add half the quantity of soaked and drained dal and grind 30% • After that add half of mashed potatoes. • Now add the hing ¼ tsp, Rock salt-1/2tsp and water -1 tbsp. • Close the lid and grind to a smooth paste. • Pour in a large bowl and set aside. • Now take the rest of the soaked dal and potato with the rest of the ingredients of same quantity and grind to a fine paste. • Add to the batter bowl and add rice, corn flour and baking powder. • Mix well for 5 mins with fingers. Don’t press with palm. Set aside. • Take water in a bowl and keep near. • Dip your hand in water every time before taking batter for the vadai. • Now keep the stove on medium flame and pour oil. • Once hot put a drop of dough to check. • Once it fluffs up remove from the oil. • Now take batter and make a ball shape. Press lightly and make a hole in centre with your thumb. • Drop in the oil and fry till brown and then flip over. • Once brown on both sides remove the medhu vada to a strainer. • You can repeat the process for the rest of the dough. • If you feel risky dropping in oil directly you can use a round ladle. • Dip your hand and the ladle in the water and place the batter on the ladle. • Pat and make a hole in the center and drop into the oil. • Repeat the process for the rest of the batter. • Crispy and yummy perfect medhu vada ready to serve hot with sambar and coconut chutney. Tips: • More the water we don’t get right shape and texture of the urad dal vada. • When using ladle both hand and ladle should be dipped in water every time before placing the vada batter.

Learn how to make medhu vada, the south Indian snack made with urad dal as main ingredient. Crispy and delicious snack (Turn on CC for tamil description) Detailed recipe post : 🤍 Medhu vadai recipe in tamil : 🤍 Medhu vadai Ingredients 1 cup urad dal 1 inch chopped ginger 1 cup chopped onion (I used small onions) 3 green chilli 1/8 tsp Asafoetida Coriander leaves Curry leaves finely chopped carrot Salt While grinding mixie, certain things you need to consider for perfect vadais. a)Good quality urad dal for more quantity of vadai. b)After soaking urad dal for 2-3 hours, I refrigerate for an hour. This gives fluffy batter, more volume and easy to shape too. c)Never grind the batter for long time at once, grind few seconds - stop, grind again. Open the lid and add water little by little when needed. d)Use ice cold water. e)I added roughly 1/2 cup water for 1 cup good quality urad dal. I got around 26 medium sized vadas. f)I grind green chilli, ginger, urad dal without water first, then add water little by little and grind. g)Never add salt while grinding. Also dont grind for too long, your batter will become pasty and cannot shape.
